In every South Indian household, uppinakai is more than a condiment—it is memory, identity, and love on a spoon. Our family has been making uppinakai the traditional way in Ballari, Karnataka, for as long as we can remember, using recipes handed down from our ajjis and the methods that have stood the test of time.
The Art of Making Uppinakai
We sun-dry our fruits and vegetables to concentrate their flavor. We grind our spices by hand, in small batches, so every jar carries the warmth of fresh fenugreek, mustard, and turmeric. We use only mustard oil—never refined oils—because tradition demands it. And we never add preservatives. Our uppinakai are preserved the way nature intended: with salt, oil, sunshine, and time.
